🍋 Lemony White Bean Salad

Ingredients
1 ½ cups cooked quinoa (from ½ cup dry; day-old works best)
1 (15 oz.) can white beans, drained & rinsed
¼ cup Italian parsley, finely chopped
Zest of ½ a lemon
3 Tbsp lemon juice
2 Tbsp extra virgin olive oil
4 Tbsp red onion, finely chopped
3 cloves fresh garlic, minced
½ tsp sea salt
½ tsp ground black pepper
Instructions
In a large bowl, combine the cooked quinoa and white beans.
Add in parsley, red onion, and garlic.
Drizzle with lemon juice and olive oil.
Season with salt and pepper.
Toss everything until evenly mixed.
Serve chilled or at room temp.
