OOOOO wait, we aren’t done yet… let’s chat about my favorite additions! If you know me, you know I love a good hearty salad, chock-full of different food combinations. Here are some recommendations I love to add to pump up the protein and turn this delicious salad into a meal!
Baked chicken thighs or roasted chickpeas (I usually add seasoning and just throw them in with the sweet potatoes to make it easy and efficient)
Sunflower seeds (great source of vitamin E supports skin health and immunity)
Pepitas (vitamin K important for blood clotting and bone health)
Goat cheese ( lower lactose content easier to digest than dairy products from cows milk)

I eat a lot and could have had a larger sweet potato. I highly recommend adding sunflower seeds, pine nuts and a protein. I will definitely make this again and try a different variations.
